Fancy Caramel Apples

I love the loaded caramel apples that they sell at the mall at the Rocky Mountain Chocolate Factory. A friend and I, while trying to walk at the mall one day about two years ago, tried these apples  covered in chocolate, nuts, candy bar pieces and tiger butter. The apple was so good but probably reversed any of the benefits we were hoping to get from the walking.

I long for these apples. They are the perfect treat after braving the crowds at the mall during the holiday season. The only problem is they are so expensive.

Since Halloween is around the corner, and the neighbors all gather in the cul-de-sac to pass out candy, I thought that making some fancy caramel apples would be a nice treat for the adults. So I tried making my own version of these amazing apples.

fancy caramel applesI have to say I was kinda scared to try this but it was so much easier than I thought it would be. It only took about 30 minutes and that was with stopping to take pictures. My only caution is: remember that melted caramel is extremely hot.

Ingredients

4 granny smith apples(any tart apple will work)
20-25 wrapped caramels
1-2 Tablespoons water
about 12 wrapped chocolates
1 teaspoon butter
1/4 cup peanut butter
1/4 cup white chocolate chips
1/2 cup chopped nuts or candy bars

Start by placing the caramels(unwrapped) in a skillet with a few Tablespoons of water. I was using 4 small apples and thought I would only need 4 caramels per apples. I was wrong and had to add 4 more squares when I realized there wouldn’t be enough.

Slowly melt the caramels over medium low heat.

Also, wash and DRY the apples. Stick them with chopsticks or Popsicle sticks or in my case, because I forgot to purchase the aforementioned, use forks. Yep, forks worked just fine.

melted caramelStir the caramels to make sure they completely melted.

dipping caramel applesRoll each apple in the caramel. Use a spoon to pour caramel near the top in those hard to get places.

roll in pecansImmediately roll the caramel coated apple in the chopped nuts. Make sure to press the bottoms in the nuts. This helps to keep the caramel from sticking.

Place the apples on wax paper and let them chill in the refrigerator while you get the toppings ready.

tiger butterMake the tiger butter: place equal parts of white chocolate and creamy peanut butter in a microwave safe bowl.

tiger butterMicrowave 30 seconds, stir, microwave 30 seconds, stir and repeat until the mixture is smooth.

Make the chocolate: place chocolate(unwrapped) and butter in a microwave safe bowl.

melted chocolateLike the tiger butter, microwave 30 seconds, stir, microwave 30 seconds, stir and repeat until the mixture melts and is smooth.

Once the caramel has set, drizzle the tiger butter all over the apple. I held the apple by the fork sideways over the bowl and used a spoon to drizzle ribbons up and down the sides of the apple.

Next drizzle on the chocolate the same way.

Pop the apples back into the fridge for at least an hour to let the chocolate set.

Once the chocolate is hard you can serve.

Cut into that bad boy and devour!
