I love the loaded caramel apples that they sell at the mall at the Rocky Mountain Chocolate Factory. A friend and I, while trying to walk at the mall one day about two years ago, tried these apples covered in chocolate, nuts, candy bar pieces and tiger butter. The apple was so good but probably reversed any of the benefits we were hoping to get from the walking.
I long for these apples. They are the perfect treat after braving the crowds at the mall during the holiday season. The only problem is they are so expensive.
Since Halloween is around the corner, and the neighbors all gather in the cul-de-sac to pass out candy, I thought that making some fancy caramel apples would be a nice treat for the adults. So I tried making my own version of these amazing apples.
I have to say I was kinda scared to try this but it was so much easier than I thought it would be. It only took about 30 minutes and that was with stopping to take pictures. My only caution is: remember that melted caramel is extremely hot.
4 granny smith apples(any tart apple will work)
20-25 wrapped caramels
1-2 Tablespoons water
about 12 wrapped chocolates
1 teaspoon butter
1/4 cup peanut butter
1/4 cup white chocolate chips
1/2 cup chopped nuts or candy bars
Start by placing the caramels(unwrapped) in a skillet with a few Tablespoons of water. I was using 4 small apples and thought I would only need 4 caramels per apples. I was wrong and had to add 4 more squares when I realized there wouldn’t be enough.
Slowly melt the caramels over medium low heat.
While waiting for the caramels to melt…
Pop the apples back into the fridge for at least an hour to let the chocolate set.
